
Creole Jambalaya
Savory cajun stew with shrimp and sausage
Ingredients
- 1 lb Smoked sausage sliced – substitute andouille for more authentic taste (careful, it's hot!)
- 1 c Green pepper chopped
- 2 c Onion chopped
- 1 c Celery
- 2 cloves Garlic crushed & minced
- 1 T Flour
- 1 can Tomatoes 28 oz
- 2 1/2 c Water
- 3 Bay leaves
- 1/2 c Parsley fresh chopped
- 2 c Rice uncooked
- 2 T Worcestershire sauce
- 2 t Salt
- 1/2 t Thyme whole, dried
- 1/4 t Cayenne pepper
- 1 1/2 lb Shrimp peeled & deveined
Instructions
- Cook sausage until brown in a large Dutch oven
- Drain all by 2 T. pan drippings
- Add green peppers, onion, celery, bay leaves, and garlic
- Cook until vegetables are tender
- Gradually add flour and cook until it is no longer visible
- Stir in tomatoes, water, parsley and bring to a boil
- Add remaining ingredient except shrimp
- Return to a boil
- Reduce heat and simmer covered, 20 minutes
- Add shrimp, cover and cook 10 minutes
