Penne alla Vodka With Shrimp and Sausage
Ingredients
- 2 lb Penne (or Rigatoni)
- Salt
- 4 T Butter
- 1ยฝ Onion, medium Finely chopped
- 6 Cloves Garlic Minced
- 26 oz Smoked Sausage Sliced. Typically 2 13 oz packages
- 10 oz Mushrooms, fresh Sliced
- 2 t Oregano, dry
- 1 c Vodka
- 9 oz Tomato Paste Typically 4.5 oz Tomato Paste
- 6 oz Parmasean Cheese Grated
- 2 lb Shimp Shelled and deviened
- 4 oz Sun Dried Tomatoes Chopped
- 2 t Crushed Red Pepper
- 2 c Heavy Cream
- 2 Banana Peppers Sliced
- ยผ c Basil, fresh Chopped
Instructions
- Cook pasta in salt seasoned water just short of al dante and reserve ยฝ cup water2 lb Penne, Salt
- Melt butter in dutch oven4 T Butter
- Add onion and sweat 5 minutes1ยฝ Onion, medium
- Add garlic and saute6 Cloves Garlic
- Add smoked sausage & brown26 oz Smoked Sausage
- Add tomato paste and cook until paste turns brick red and starts to caramalize9 oz Tomato Paste
- Add 2 oz vodka to deglaze. Cook until alcohol is evaporated (about 2 minutes)1 c Vodka
- Add mushrooms and cook until reduced10 oz Mushrooms, fresh
- Add oregeno and crussed red pepper2 t Oregano, dry, 2 t Crushed Red Pepper
- Reduce heat to medium low, add cream, and remaining vodk to reserved hot pasta water and cook until smooth and combined2 c Heavy Cream, 1 c Vodka
- Add cheese and melt6 oz Parmasean Cheese
- Add shrimp, cover, and cook through2 lb Shimp
- Add pasta, basil, peppers, and sundried tomatoes and toss, heating through for 2 minutes4 oz Sun Dried Tomatoes, 2 Banana Peppers, ยผ c Basil, fresh
