Cook pasta in salt seasoned water just short of al dante and reserve ½ cup water
2 lb Penne, Salt
Melt butter in dutch oven
4 T Butter
Add onion and sweat 5 minutes
1½ Onion, medium
Add garlic and saute
6 Cloves Garlic
Add smoked sausage & brown
26 oz Smoked Sausage
Add tomato paste and cook until paste turns brick red and starts to caramalize
9 oz Tomato Paste
Add 2 oz vodka to deglaze. Cook until alcohol is evaporated (about 2 minutes)
1 c Vodka
Add mushrooms and cook until reduced
10 oz Mushrooms, fresh
Add oregeno and crussed red pepper
2 t Oregano, dry, 2 t Crushed Red Pepper
Reduce heat to medium low, add cream, and remaining vodk to reserved hot pasta water and cook until smooth and combined
2 c Heavy Cream, 1 c Vodka
Add cheese and melt
6 oz Parmasean Cheese
Add shrimp, cover, and cook through
2 lb Shimp
Add pasta, basil, peppers, and sundried tomatoes and toss, heating through for 2 minutes
4 oz Sun Dried Tomatoes, 2 Banana Peppers, ¼ c Basil, fresh
