Slice ham fat in ¾ inch diamonds and stud the corners with cloves. Add water or wine to baking pan. Bake flat side down to an internal temperature of 140°.
1 Ham, Whole cloves, ½ c Water
Remove from over about 15 minutes before it is done. Turn fat side up, glaze, and return to oven for final 15 minutes
Prepare glaze
Bring all glaze ingredients to a boil and simmer 2 - 3 minutes
½ c Pineapple juice, ½ c Brown sugar, dark, ¼ t Ginger, ground, 2 T Bourbon, 2 t Corn starch, 1 t Dry mustard
